My Go-To Granola Recipe

So I get questions every week on instagram about my go-to granola recipe, so I thought I’d bundle it all up in blog post for you for easy cooking!

This granola recipe is special, in that it has very low sugar unlike most granolas you can buy at the supermarket. I always recommend low refined-sugar diets, and especially low sugar breakfasts for better blood sugar control throughout the day and therefore, hormone regulation. So if you love starting your day with granola, this is the recipe for you! It’s loaded with protein and good-quality fats from the nuts and seeds and will stabilise your blood sugar (instead of sending it on rollercoaster ride for the rest of the day if you were to load up on sugar in the morning!).

So here it is, my go-to granola recipe!

Ingredients

1 cup chopped almonds (raw)
1/2 cup chopped walnuts
1/2 cup chopped macadamias
1/2 cup chopped cashews
1/2 cup pepita seeds
1/2 cup sunflower seeds
1 tsp ground cinnamon
1 tbsp melted coconut oil
1 tsp vanilla extract
1/4 cup reduced sugar dried cranberries
(Optional: 1-2 tbsp honey) * I don’t add any sweetener and don’t recommend it if you have any blood sugar issues, but you can add a small amount if you’d like.

Method

  1. Preheat oven to 170° Celsius and prepare a large baking tray with baking paper.

  2. Combine nuts, seeds and cinnamon in a large mixing bowl.

  3. Drizzle over melted coconut oil and vanilla extract (and honey if you’re using) and mix well.

  4. Spread granola evenly over the prepared baking tray and place in oven.

  5. After 15 mins, check granola and mix with a spoon for even baking.

  6. Bake for another 10-15 mins or until golden. (Keep an eye out as it can burn quickly!)

  7. Once cooled, sprinkle over dried cranberries and store in an airtight jar or container in the pantry.

Serving suggestion: I eat my granola with a little almond milk, coconut yoghurt and berries for either a snack or breakfast. You can add whatever fruit you’d like or just have it on it’s own, you do you!
